Description:
For starters...I'd like to say that this is not my recipe...
But on a recent trip to Sheffield to visit one of my dearest friends, Huda I was given this recipe and even tried to make it while I was there.
As a self-proclaimed expert on carrot cakes (I have sampled them in almost every country I've visited) - I have to say that this was one of the BEST!!

I hope Hisham does not get upset that I've published this here...but I felt the need to share this...because it's sooo good.
I should also note that the version that Huda & I made (albeit very good already) was apparently not as good as Hisham makes it...so...there you go... :)



Ingredients:
8oz soft brown sugar
175 ml sunflower oil
orange zest from 1 orange
3 eggs

10oz plain flour
1tsp cinnamon
1tsp grated nutmeg
1tsp bicarbonate soda
1tsp baking powder

8oz grated carrots
2oz chopped walnuts

Frosting
200g cream cheese
5tsp vanilla essence
115gr icing sugar
chopped walnut

Directions:
Mix soft brown sugar + sunflower oil + orange zest + eggs one by one.

Sift plain flour + cinnamon + grated nutmeg + bicarbonate soda + baking powder

Mix both and mix in grated carrots + chopped walnuts

Bake for 65 min at 180degrees C

Frosting
Beat cream cheese + vanilla essence then add icing sugar bit by bit.
and frost cake then sprinkle chopped walnut on top

gara2 Lebaran kemarin masak opor trus ngga abis2...tapi udh dipanasin terus sampai lunak banget dan dagingnya udah tersuir2 sendiri...eh...iseng nyoba ...ayamnya digoreng aja....ternyata enak...

tadi malam nyoba lagi...kali ini emang niat mau bikin ayam goreng itu...ama dioseng pake cabe ijo...and voila...sukses dah...

Ingredients:
ayam satu ekor

Bumbu untuk Opor Ayam:
bawang merah
bawang putih
kemiri
sereh
daun jeruk
ketumbar
jinten
kunyit
santan
garam/merica

kalo males bikin opor sendiri cari aja bumbu jadi opor or bumbu Thai Green Curry

utk dioseng:
bawang merah
cabe ijo


Directions:
sebetulnya sih itu ayam dimasak kaya masak opor aja Ki... (bawang merah, bawang putih, kemiri, jinten, kunyit dikit) trus ayamnya dimasak lama sampai lunaaak banget...di diemin aja di atas kompor dengan api kecil seharian... ntar kalo dagingnya udh lepas gitu dari tulangnya lu keluarin tulangnya dan dagingnya yg udah tersuir2 di goreng ampe garing.
trus dioseng pake bawang merah dan cabe ijo.

Description:
Terinspirasi oleh nasi goreng dr cafe sebelah salonnya Ratih...dan dicoba2 eh..ternyata gampang... he he he...

Inspired by the Fried rice from a cafe next to Ratih's salon in Jakarta, tried to recreate it and apparently it's not that hard :)

Ingredients:
1. Teri medan/Teri nasi - satu atau dua genggam (tergantung nasi) - Tiny anchovies (they're really small and in Indonesia it's called Rice Anchovies coz they resemble bits of rice)
2. last night's leftover white rice/cold rice
3. cabe rawit - bird's eye chilies, slice thinly (use as many or as little as you want)
4. garlic - 2 or 3 tbsp minced
5. 1 egg
6. oil and/or butter
7. salt and pepper
8. soy sauce (kikkoman)


Directions:
1. soak the teri/anchovies in water and drain
2. heat oil and butter in wok and stir fry garlic till fragrant.
3. add sliced chilies
4. add teri/anchovies
5. add soya sauce
6. add rice and mix well
7. make a whole in the middle of the rice and crack an egg and mix till cooked
8. stir well and serve.

Description:
For 40 days Alex gave up meat for Lent, so I had to think of ways to cook vegetarian. This recipe is a combination of different things I already knew and things taught by friends.
A long time ago my friend taught me how to make Agedashi Tofu - a favorite of mine whenever we go to Japanese restaurants, I use the technique of the Tofu frying and combine it with my regular stir fry and voila...it's almost like "sapo tahu" as usually served in Chinese restaurants in Jakarta

For non-vegetarian alternative you can add seafood or chicken.

Ingredients:
* Tofu - I use either the Blue Dragon Firm or any Firm Tofu, although I've also tried using the Japanese tofu but it is sometimes too soft and it breaks into little pieces - Cut into medium size cubes
* Cornflour - for dusting the tofu and to thicken the stir fry
* Vegetables of choice - I usually use Broccoli, mushrooms, carrots
* For non-vegetarian alternative use: prawns, or seafood or choice, or chicken
* Oyster sauce
* soy sauce
* salt and pepper
* garlic - 2 tbsp minced garlic
* cooking/vegetable oil

Directions:
1. Heat oil in shallow frying pan
2. Dust each tofu piece with cornflour that has been seasoned with a bit of salt and white pepper
3. Fry Tofu until cooked on both sides. - set aside
4. Remove oil and reserve about 1-2 tbsp to stir fry garlic
5. Stir Fry garlic till fragrant
6. Add prawns and stir fry till cooked
7. Add soy sauce and oyster sauce and mix
8. Add broccoli and other veggies and a bit of water and cook
9. mix 1-2 tbsp or cornflour with water and add a bit of oyster sauce - add to cooking.
10. Mix till the sauce thickens.
11. Add the fried tofu pieces and stir LIGHTLY and just give a once mix - be careful not to break the tofu pieces
12. Serve with rice

Description:
For one of the celebrations I had for
my birthday.- I had quite a few.
My friend Valentina baked me these brownies and they were divine.
Knowing that Ratih would love this...I asked Valentina for the recipe. And she finally gave it to me after a long wait...and Ratih and I FINALLY had the chance to make it last monday for the PPI Norwich "Kumpul2"


Ingredients:
200g low fat soft cheese
1/2 tsp vanilla flavoring
2 eggs
250 g caster sugar
100 g butter
3 tbsp cocoa powder
100g self raising flour sieved
50 g chopped pecans or walnuts

Fudge icing:
50 g butter
1tbsp milk
100 g icing sugar
2 tbsp cocoa powder
pecans/walnuts to decorate

Directions:
1. Lightly grease a shallow cake pan and line the base
2. Beat together the cheese, vanilla flavoring, and 25g of the caster sugar until smooth, then set aside
3. Beat the eggs and the remaining caster sugar together until light and fluffy.
4. Place the butter and the cocoa in a small pan and heat gently, stirring until the butter melts and the mixture combines, then stir it into the egg mixture.
5. Fold in the flour and the nuts.
6. Pour half of the brownie mixture into the pan and level the top. Carefully spread the soft cheese over it, then cover with the remaining brownie mixture.
7. Bake in a preheated oven, 180 C/ Gas Mark 4 for 40-45 minutes. Cool in the pan.
8. To make the icing, melt the butter in the milk. Stir in the icing sugar and cocoa powder. Spread the icing over the brownies and decorate with pecan/walnuts if using. Leave icing to set, then cut to serve.

Description:
This is the "lazy-person's" version of Sate Ayam. Traditionally you would put chicken meat on bamboo skewers and grill them on a barbecue with charcoal...etc..
but since I have a limited kitchen (it's teeny weeny tiny) and we all had limited time, I suggested we use chicken wings but use the seasoning and spices of Sate Ayam

Ingredients:
Ingredients
Shallots
Soy sauce
Indonesian Soy Sauce (Kecap Manis)
Peanut sauce mix
Peanut butter
Chili paste
Chili powder
Chicken wings

Directions:
1. Marinate chicken wings with minced shallots, soy sauce, salt pepper, Indonesian soy sauce.
2. Grill
3. Mix peanut sauce with peanut butter and chili powder and paste. Simmer to boil. Serve with wings.

Description:
This is the dessert we made for the UEA International Party on the 2 March 2005.
Explaining what "BUBUR CANDIL" was to people who came was a bit of a mouthful.
Basically it's "sweet-potato-balls-with-palm-sugar-and-coconut-milk" - try saying that about 50 times in 10 minutes :)
Yup..that's how long it lasted - we were ambushed!!! :)

Ingredients:
Ingredients
Sweet Potatoes
Palm Sugar
Coconut Milk
Demerara Sugar
Glutinous Rice Flour
Corn Flour
Pandan Leaf



Directions:
Boil the sweet potato with skin on. When cooked and drained, peel and mash and mix with glutinous rice flour until it forms a dough that’s not too sticky.
Roll the dough into small balls.

Boil the palm sugar and demerara sugar with water. When boiling, drop the balls in and wait till they all float to the top. When they’ve all floated, turn off hob.

Boil the coconut milk with a pandan leaf, add a little bit of salt, bring to the boil and simmer…add cornflour to thicken.

Serve the sweet potato balls and palm sugar with coconut milk

Description:
Don't you hate it when you have bananas that are already too ripe? It's too icky to eat, but a waste to throw away. Anyway...I was taught this recipe by one of my best friends, Essie. It's so easy and can be fun to make. After she taught me, I experimented with putting different ingredients in too. So enjoy!!

Ingredients:
Ripe bananas - mashed
Flour
Sugar - amount depends on how ripe your bananas are. If really ripe then you may want to put less sugar
Oil to fry

Additional ingredients that I like to put sometimes:
raisins
nuts
cinnamon
vanilla extract

Directions:
1. Mix all ingredients together until it kind of resembles a paste...but make sure it's not too runny or liquidy...if it is then add some more flour.
2. Heat oil
3. Use a two spoons to spoon the mixture into the hot frying oil. Essie told me that the "traditional" method is to use your hands and drop balls of the mixture into the oil.
4. Fry till brown - don't worry if they turn dark brown. It's not burned...I think it's because of the bananas that they turn dark.
5. Drain on paper towel...

My mom sms me this recipe today...it sounds easy and yummy...I haven't actually tried it yet, and will hopefully try to make it tomorrow.

Ingredients:
- Chicken
- Green Chillies
- Green Tomatoes
- Garlic
- Lime Leaves
- Coconut Milk

Directions:
1. cut chicken
2. dice garlic, chilies, and tomatoes
3. stir fry garlic till fragrant
4. add chillies
5. add chicken
6. add tomatoes and let it sit on medium heat till fragrant
7. Transfer to baking dish and place in oven till brown and cooked :)
8. serve with steaming white rice :)

This was made as an experiment, with visions of "Wok with Yan" in my head, trying to remember the things that Yan used to teach on the show...No recipe, so had to use my imagination..
It was a success :) Thank God...

Ingredients:
Boneless Chicken/Chicken fillet - cut into small bite size pieces or alternatively use chicken wings
Corn Flour/Maizena
salt
pepper
light soy sauce
oyster sauce
garlic - dice or mince
dried chillies of course :) - cut in 2 or 3. - use as much as you want
oil

Directions:
1. Heat oil in wok to deep fry
2. marinate the chicken pieces/wings soy sauce, oyster sauce, salt and pepper - leave for minimum 20 minutes
3. coat with corn flour.
4. Fry the chicken pieces and set aside
5. Leave about 5 tablespoons of oil in wok and firstly stir fry the garlic till it's about crispy
6. Add salt and pepper to the oil
7. Add cut dried chillies and stir fry (not too long)
8. Add chicken pieces and let the oil coat all the chicken pieces.
9. Serve with warm white rice
10. Warn your guests of the chillies...

Description:
Isi lumpia itu bisa macam2 terserah dan tergantung apa adanya. Dulu nyokap gue bilang, kalo hari ini masak soto, besoknya bisa bikin lumpia :) karena ya ada toge, soun, ayam, dsb. Jadi ya tergantung kreatifitas aja sih...tapi kali ini gue kasih resep yang paling komplit yg pernah dibuat oleh "Workshop Lumpia Nelson"

Ingredients:
- Kulit lumpia yg frozen
- Frozen shrimp - 1 packet - bisa di ganti ayam atau daging cincang juga
- Toge - 1 pack
- French Beans di potong kecil2.
- Wortel - diparut kasar

- bawang putih
- garam/lada
- kecap asin
- oyster sauce

Directions:
1. Defrost dulu kulit lumpia dan pastikan bahwa dia tidak kekeringan
2. Tumis bawang putih dengan minyak sedikit
3l Tambahkan udang (atau ayam atau daging)
4. Beri garam, kecap asin, lada, oyster sauce
5. Masukkan semua sayuran dan aduk rata
6. Dinginkan
7. Bungkus dalam kulit lumpia - pastikan padat, dan rapat. Ujungnya di "lem" dengan air putih saja.
8. Goreng dalam minyak panas

Sajikan dengan (gaya bu Ari lagi nih):
a. Cabe Rawit
b. Sambal ABC
c. Sambal Pecel :)

ini hasil workshop hari Minggu, 24 Oktober di rumah Bunda Ari :)

Ingredients:
- Tahu goreng (tahu pong) beli di Lun Moon di Gerrard st. London
- Toge
- Wortel - dipotong kecil2 atau parut kasar
- Udang kecil2
- Bawang putih
- Kecap Asin
- garam/merica
- tepung terigu
- garlic powder
- Royco rasa ayam (optional)
- Minyak goreng

Directions:
1. Tahu dibikin lubang di salah satu ujung dan dikeluarkan isinya.
2. Tumis bawang putih dengan minyak sedikit
3. Masukkan udang, tambahkan kecap asin, garam, merica
4. Masukkan isi tahu, toge, dan wortel. Masak sampai toge layu dan semua tercampur rata.
5. Angkat dan dinginkan sedikit
6. Isi tahu yg udah dibolongin, dengan isinya
7. Campurkan tepung terigu, garam, merica, bumbu royco, garlic powder dengan air sedikit - jangan terlalu encer...
8. Masukkan tahu yg sudah diisi satu2 ke adonan tepung+air dan....
9. Goreng dengan minyak panas.

Siap...deh...
sajikan dengan (ini gaya Bunda Ari nih...) :
a. Sambal Saos
b. Cabe Rawit
c. Bumbu pecel
d. Sambal Saos + Kecap

Ingredients:
Kulit Spring Roll yang ready to use
Pisang - dipotong2
Selai coklat - nutella juga boleh
Minyak goreng

Directions:
1. Ambil selembar kulit spring roll....
2. Olesi ujungnya dengan nutella
3. Atur pisang diatasnya
4. Gulung sampai rapat.
5. Goreng pakai minyak panas.

udah deh.. :)

Description:
I served this at the First Buka Puasa of PPI Norwich - 2004. :)
and judging by the number of people that asked for the recipe...i guess it was ok.. :) - Mohon maaf ukurannya ngga persis...biasanya kalo masak pake feeling aja :)

Ingredients:
1 packet Cocktail Shrimp - dicincang kasar
2 packet Crab/seafood sticks - di potong2 trus disuwir2
2 packet stir fry mix (cabbage, beansprouts, carrots, etc) - di cincang kasar juga biar ngga gede2 banget
10 butir telur - dikocok
1 botol tomato ketchup
1 kaleng nanas
1 cup green peas (yg frozen juga boleh)
bawang putih 10 siung (5 utk telurnya 5 utk bumbunya)
garam/merica
oyster sauce
kecap asin
tepung maizena
minyak sedikit aja

Directions:
1.udang dan crabstick dicampur.
2.tumis bawang putih dg sedikit minyak, masukkan udang dan crabstick - tambahkan garam, merica dan sedikit kecap asin dan sedikit oyster sauce
3. masukkan sayuran stir fry dan aduk rata. Angkat dari api.
4. Aduk campuran udang dan sayuran dengan telur yg sudah dikocok sampai rata.

Nah..sekarang ada 2 alternatif...
1. Bisa digoreng/di dadar pake panci sedikit2... atau.
2. Dimasukkan diloyang pyrex (casserole dish) dan dipanggang. Dipanggangnya di oven 200 C, selama kurang lebih 1 jam (tergantung oven juga...pokoknya sampai mateng)
Alternatif no. 2 lebih sehat karena ngga pake minyak sih..tapi ya terserah.

Saosnya:
1. Tumis bawang putih dengan minyak dikiiit aja.
2. Masukkan saos tomat sebotol
3. Masukkan air dari nanas kaleng (buahnya simpan dulu buat ntar)
4. Tambahkan oyster sauce dikit dan garam merica secukupnya
5. Aduk sampai mendidih.
6. Campur tepung maizena dg air sedikit, terus campurkan ke saos sampai mengental

Nah..
Kalau yg di oven sudah matang. Potong2 trus atur dipiring, ditaburi dengan buah nanas kaleng dan green peas yg sudah di defrost tentunya... siram deh pake saosnya... selesai!! horreee... :D
