Description:For one of the celebrations I had for
my birthday.- I had quite a few.
My friend Valentina baked me these brownies and they were divine.
Knowing that Ratih would love this...I asked Valentina for the recipe. And she finally gave it to me after a long wait...and Ratih and I FINALLY had the chance to make it last monday for the
PPI Norwich "Kumpul2" Ingredients:200g low fat soft cheese
1/2 tsp vanilla flavoring
2 eggs
250 g caster sugar
100 g butter
3 tbsp cocoa powder
100g self raising flour sieved
50 g chopped pecans or walnuts
Fudge icing:
50 g butter
1tbsp milk
100 g icing sugar
2 tbsp cocoa powder
pecans/walnuts to decorate
Directions:1. Lightly grease a shallow cake pan and line the base
2. Beat together the cheese, vanilla flavoring, and 25g of the caster sugar until smooth, then set aside
3. Beat the eggs and the remaining caster sugar together until light and fluffy.
4. Place the butter and the cocoa in a small pan and heat gently, stirring until the butter melts and the mixture combines, then stir it into the egg mixture.
5. Fold in the flour and the nuts.
6. Pour half of the brownie mixture into the pan and level the top. Carefully spread the soft cheese over it, then cover with the remaining brownie mixture.
7. Bake in a preheated oven, 180 C/ Gas Mark 4 for 40-45 minutes. Cool in the pan.
8. To make the icing, melt the butter in the milk. Stir in the icing sugar and cocoa powder. Spread the icing over the brownies and decorate with pecan/walnuts if using. Leave icing to set, then cut to serve.
